You missed out the most important bit, learn how to sharpen your knives correctly with a steel. You can spend as much money as you like on knives, but if you don’t know how to sharpen them and how to always keep them as sharp as possible you might as use a table knife in the kitchen.
You don’t sharpen a knife on a steel, you hone a knife on a steel after you’ve sharpened it on a whetstone.

No Casey Chan, we use knives to chop stuff, like, really chop stuff….
But in the US the fork is the one and only dining implement used so they needed to find alternative uses for knives.
