It's unusual to see a dedicated hardware key for anything on smartphones these days, so when the S8 was announced with a key just for its virtual assistant Bixby, everyone wanted to know if its function could be changed.

Well, now we know: you can indeed remap the Bixby key to other functions – this video from Reddit shows the key pulling up Google Assistant instead:
This is accomplished via a third-party app called All In One Gestures, but hopefully when Samsung sees the demand for this, they'll include a way to do it natively. No one likes trusting third-party software to do things that should be easy, and considering this app asks a lot of permissions and runs as an overlay (which can interfere with other apps), it's not a great solution.
